When I started Laughing Bees, I had no formal confectionery training. I found a recipe and modified it to suit my needs. My first 2 batches were perfect, and I easily sold out of them at a local holiday market. After the market, I went back to the kitchen and ruined almost every batch I made for 3 months. During that time I learned how NOT to make Honey Caramels so that I now know HOW to make Honey Caramels. I started researching caramel making techniques, starting with YouTube and online tutorials, always searching for professional instruction. Eventually I found Candy School at the University of Wisconsin. My classmates were employees of some of the biggest candy companies in the country (and the world!) and our instructors were the rock stars of professional confectioners. While I have always had a passion for experimentation in the kitchen, this course armed me with the confidence and knowledge to experiment even more.
